Low Carb Fried Rice using Cauliflower Rice

I whipped up this Cauliflower Fried Rice for dinner a few nights ago and was honestly shocked at how good it was and just 16g carbs per serve! It taste exactly like regular fried rice!!! So chuffed. The longest part was grating the cauliflower so if you're feeling lazy or don't have time, you can buy cauliflower rice already done. This is a super quick and easy recipe which I'm sure will become a regular act in my kitchen :) Luke

 1 large cauliflower (500g), grated

 400g left over Christmas ham, diced

 4 large eggs

 1 large shallot, finely sliced

 1/2 brown onion, diced

 1/2 cup peas and corn

 1 tbsp sweet soy sauce (Note: this is not generally gluten free)

 1 tbsp dark soy sauce (Note: this is not generally gluten free)

 1 tbsp olive oil


1Heat half the olive oil in a large wok (or frypan)

2In a small bowl, whisk together the eggs then pour them into the wok.

3Using a spatula, stir the eggs around until they're cooked through (kind of like scrambled eggs) then remove them from the wok and put them aside for the moment

4Add the remaining oil to the wok, then add the onion, shallots and ham and stir fry until the onions are browned and starting to caramelise (that's where the flavour hides)

5Add the peas and corn and cook for another 2-3 minutes

6Add the grated cauliflower, sweet soy sauce, dark soy sauce, and the cooked egg mixture back into the wok and stir fry for 3-4 minutes until the cauliflower is softened slightly, but not mushy

7Top with sesame seeds and enjoy!
