The Best Low Carb Pasta Sauce

Whilst nothing will compare to a homemade sauce, pre made Pasta sauces are super convenient and can make low carb living a little easier.

They are a quick way you can add flavour to your veggies, caul-rice, legume pasta or Zoodles.

Another great way to use them is as a pizza sauce on top of your Protein Pizza Base

If you prefer home made…

Being brought up in an Italian house hold mum made two types of sauce. The Sunday sauce, which started at 7 am and cooked low and slow for hours and ready by 12-ish for lunch. Sooo good!! 😍

Then the quick sauce done in a heavy frying pan, which didn’t need as long. This was done with Olive oil, Garlic, Basil, Oregano and either homemade Passata, chopped ripe tomatoes (overripe roman or cherry) or store bought Passata (Mutti or Val Verde) You can use chopped canned tomatoes too (just check that there is no added sugar).

I don’t really measure anything, I just ‘a bit of this, a bit of that’ when it comes to sauce making. This is is a great base recipe where you can add different things to it - i.e. chopped olives, chopped & cooked bacon, mushrooms, chilli, onion or as bolognese etc.

Pasta sauce with garlic & chilli with Adzuki pasta

Ingredients:

  • 3-4 cloves garlic, chopped or minced (I use a lot but you can use less if you like)
  • 3 TB of olive oil (I don’t measure I just pour generously)
  • 1/2 chopped onion* optional
  • Salt
  • Pepper
  • Fresh Basil
  • Dried Oregano
  • Chilli *optional
  • 2.5 cups of chopped ripe tomatoes

Method:

  • In a large pan, pour in the oil, and allow to heat up then add the chopped garlic, onion, make sure the pan isn’t too hot or the garlic will burn. Once tender, add the tomatoes.
  • Add the chopped basil and oregano. Cover and cook until it's bubbling, then drop the heat and let it simmer for 20-30 mins. Add salt, pepper, chilli to taste.
  • I also add a touch of parmesan to the sauce, it thickens it and adds flavour.

Here's a recipe that I found online that sounds delish...

This recipe suggests bacon fat or butter in the sauce, which sounds soooo good! Check it out here.

Another delicious way to enjoy a good sauce...

"Eggs in sauce". This is what I called it as a kid, we would have this on a Sunday, it's a great lazy email that's easy to whip up.

It involves poaching eggs in the tomato-based sauce and then you dip crusty bread into it... 🤤 🤤 I found a great recipe online which also gives you a bit of a background story to where this recipe originated from, you can find it here
