Baked Vanilla Cheesecake Slice is a classic dessert Our version has NO added sugar and is super low carb! 2.2g carbs per piece.
This recipe is great as is or can be the base for your favourite flavoured cheesecakes.

- Yields 16 squares
1/2 cup (60g) of Low Carb Cookie Mix
1/2 cup (40g) desiccated coconut
1/3 cup (80g) melted butter
Cinnamon and or ginger to taste (we used 2 heaped tablespoons of ginger for a super ginger hit)
1 tablespoon of Sugar-free Icing Mix if you have a sweet tooth!
500g (2 tubs) Cream Cheese
2 teaspoons vanilla paste/essence
Low Carb Cookie MixAUD$ 9.95
98% Sugar Free Vanilla Icing MixAUD$ 9.95
1Combine all in a bowl then press into a lined slice tray (mine was about 25cm by 20cm)
2Bake at 160 degrees for 15 mins until golden brown.
3Allow it to cool.
1Soften cream cheese in the microwave
2 Then beat the eggs, vanilla, icing mix in with the softened cream cheese until light and fluffy
3Pour the vanilla mixture on top of the cooked slice base and bake for another 30 minutes on 160 deg.
4Remove from oven and let it cool to firm up, otherwise, it's super soft.
1Serve with berries or any other cheesecake toppings. The exciting thing is that this is a vanilla base - you can go crazy with flavour additions that you add in - frozen berries, chocolate, nuts, mint essence etc.
1will keep in the fridge for up to 5 days.
