Instructions
To make 1 batch of sugar free icing (frosting) you’ll need:
75g (level ⅓ cup) Sugar Free Icing Mix
200g cream cheese
60g (3 tablespoons) soft butter
2 tablespoons of hot tap water
Each batch is enough to ice 12 regular cupcakes.
IMPORTANT: Butter & cream cheese must both be at room temp to create a smooth icing. If you need to microwave, be sure to soften, not melt.
PREPARE – Place all ingredients in a large bowl.
MIX – Place all ingredients in a stand mixer bowl. Beat on low to combine, then increase to high for 5 minutes until light and fluffy. Electric hand beaters can be used but may need extra time to ensure light and fluffy icing.
FLAVOUR OPTIONS
Vanilla – make as above.
Strawberry – add 3 mashed strawberries instead of water.
Lemon – use 1 tablespoon of lemon juice instead of water.
Coffee – add 1 tablespoon instant coffee granules.
DECORATE – Icing can be piped or simply spread onto cooled cupcakes. Decorate as desired.
STORAGE – Unused icing can be stored in the fridge (1-4°C) for up to 5 days. Icing can not be frozen. Iced cupcakes should be stored in the fridge but served at room temperature

Love this for making keto friendly icing with cream cheese. Also great for fudge making too.

Sugar free never tasted so good!
I am very picky when it comes to sugar free alternatives, because, well, they always taste awful. However, this product is A.Ma.Zing! It has no aftertaste (confirmed by my family). Even my grandmother wouldn't believe it was sugar free til I showed her the packet. Thank you for allowing those in our family with special diets to be included with such a great product. It means special occasions for us have just become even more so. Thanks again.

Xylitol = upset stomach
Xylitol caused a hugely upset stomach and terrible diarrhoea. Will be sticking with powdered monkfruit from now on.

Hi Zosha, sorry to hear you had an upset stomach. Our products are high in fibre and protein, which can affect people in different ways. Our sweet mixes such as the sweet muffins contain natural sweeteners (erythritol and xylitol) which can also affect some people. We suggest trying smaller servings and drinking plenty of water, and to seek advice from a health professional.

Vanilla icing mix
Yay, second try and it worked. Icing is lovely and would definitely recommend it. Make sure you use FULL cream cheese. I now have 36 lovely iced, guilt free up cakes.
