Ingredients

1 pack of Low Carb Vanilla Cupcake Mix
- 2 eggs
- 1 cup milk of choice
- 1/3 cup melted butter
- 2 tablespoon instant coffee (15g)

1/2 cup Sugar-Free Choc-Chips (100g)

1/3 cup Sugar-free Icing Mix (75g)
- 1 Tbsp Cocoa Powder (10g)
- The instant coffee is for swirling into the cake batter
- The cocoa powder is for swirling through the icing

Directions
- Preheat oven to 180 degrees
Prepare the cupcake tin with baking paper cases/ or use a silicon baking tray.
Pour the Vanilla Cupcake Mix into a bowl. In a separate bowl whisk together the melted butter, eggs and milk.
Combine the wet ingredients to the cake mix and mix well.
Stir through the instant coffee and choc chips, then portion into 12 oil sprayed patty cases.
Bake on the top shelf got 15-20 mins, rotating halfway.
Remove from oven and cool on a cooling rack
Once cooled completely, you can ice.
Ice with regular vanilla icing with cocoa swirled through the icing mixture.
