Instructions
To prepare 12 cupcakes, 24 baby cakes, or 1 low carb vanilla cake, you will need:

2 large eggs
125ml (1/2 cup) milk of choice
80g butter, melted
PREPARE – Prepare – Preheat a fan forced oven to 170°C. Spray the inside of 12 cupcake wrappers with oil to avoid sticking (or use a silicone tray).
MIX – In a large bowl whisk together eggs, milk and melted butter. Add Vanilla Cupcake Mix. Using a hand whisk, beat for approx. 30 seconds until the mixture is smooth and glossy. Batter will thicken. Portion evenly into 12 wrappers.
BAKE – Place tray in preheated oven, and bake for 15-20 minutes until the cupcakes spring back when touched. After baking, remove cupcakes from tray and place on cooling rack.
ICE & ENJOY – Let cupcakes cool completely before icing with PBCO. Sugar Free Icing. Cupcakes are best served at room temperature.
STORAGE – Cupcakes must be stored in the fridge (1-4°C ) for up to 5 days, or freezer (-18°C ) for up to 3 months. Cupcakes should be served at room temperature.

Great flavour and texture

Love it, no weird pea protein after taste, the texture is versatile enough to make different types of desserts or breakfast or snacks. The texture is versatile enough to even use in waffle machines or sausage roll maker. So easy to use, no need to add so many different types of ingredients

Love love love these cupcakes
They are really delicious, filling cupcakes. I feel like I am not missing out at all. I add slivered almonds as well. So glad I found these!!

Once baked didn't keep long, even with refrigeration. Had a rubbery texture. Not a fan.

Hi Zosha, sorry to hear you have had a poor experience with these cupcakes. Our products do not have any of the filler ingredients (preservatives, etc) that keep them fresher for longer. We do recommend that if you have more than you can eat that you either use half the pack at a time or freeze them. I tend to do that myself and they defrost nice and fresh!

Vanilla Cupcake Mix
This is a versatile mix. Sometimes I add coffee, sometimes lemon, and sometimes orange! It is great to share with my coeliac and diabetic friends - absolutely delicious!
