Low Carb Apple and Cinnamon Teacake

How good is the smell of anything cinnamony baking in the oven?

There is something so comforting about an Apple & Cinnamon Tea Cake. Those sweet apple chunks and spicy cinnamon notes make any catch-up even sweeter! By using the Vanilla Cupcake Mix as the base you can enjoy a sweet treat without the sugar overload and know that you are enjoying a cake that is actually good for you!

 1 pack of Low Carb Vanilla Cupcake Mix

 2 eggs

 80g butter, melted

 1/2 cup milk of choice

 1 small/ medium Pink Lady Apple, diced. (150g)

 1 TB of cinnamon

 1/2 cup flaked almonds (50g) to sprinkle on top


1Preheat oven to 170 degrees

2Line a small cake tin with baking paper or use a silicone cake tin.

3n a large bowl whisk together eggs, milk and melted butter. Add Vanilla Cupcake Mix. Using a hand whisk, beat for approx. 30 seconds until the mixture is smooth and glossy. Batter will thicken.

4Fold through the chopped apple evenly. Then sprinkle the flaked almonds on top.

6Bake for 30mins at 170 degrees.

7Allow to cool before slicing.


1 Serve warm with cream or yoghurt and your favourite tea.

2This recipe can be made it into muffins.

Recipe suggestions:
Add in 100g of chopped walnuts or pecans through the mix.
Use yoghurt in place of milk.
