Smashed Berry Low Carb French Toast

Smashed Berry French Toast has a whopping 25g of Protein per serve. A perfect 'brekkie in bed' recipe for Valentines Day or Sunday mornings.

2 slices of 6 Australia Seeds Protein Bread Mix prepared as per packet 1 egg or 2 egg whites 1 TB (20ml) almond milk (or milk of your choice) 1 TB (20ml) water 1 Teasp Vanilla extract 1/4 cup (60g) ricotta cheese 1/2 cup (40g) frozen mixed berries Sugar free Maple

Heat a non-stick frying pan over a medium-high heat. In a large bowl whisk the eggs, milk and vanilla together. Place the Protein Bread slices into the mixture and let sit for a few minutes, turning the bread if the mixture doesn’t cover both sides. You want to make sure the mixture is absorbed all over the bread. While the bread’s absorbing the mixture, place mixed berries and water in a microwave safe bowl and heat for 2 minute or until bubbling. Remove and mash with fork if desired. (times may vary depending on microwave, watch carefully to avoid overheating/flowing) Turn the pan down slightly, grease with butter if necessary, and place the bread slices in. Cook for 2 - 3 minutes on one side, then cook for a further 1 - 2 minutes, until both sides are nice and golden brown. Remove the bread from the pan, top with ricotta and berries, drizzle with sugar free maple or other toppings.
