1/2 pack (160g) of Low Carb Classic Cookie Mix
1 teaspoon (5g) of ground ginger
1 teaspoon (5g) all spice
80g (1/3 cup) melted butter
1 Tablespoon (20ml) milk of choice
1/4 cup (40g) Sugar-free Icing Mix or sweetener of choice
Ginger bread cookie cutter
Mini M&M's for the buttons
Icing for decorating
Low Carb Classic Cookie Mix (320g)AUD$ 9.95
Sugar Free Icing Mix (225g)AUD$ 11.95
1Preheat oven at 160°C and line a flat baking tray with baking paper.
2Combine dry ingredients - Protein Cookie Mix, spices, sweetener in a bowl.
3In another bowl combine the melted butter and milk and add to dry mixture and mix well.
4In between two pieces of baking paper roll out the 'dough' to approx 5 mm.
5Cut out your cookies and place onto the lined tray.
6Bake for 15 min. or until golden. Allow to cool before icing.
2Icing was purchased from Woolies and a packet of mini m&m's.
3Pipe onto your cookies and dress with the red or green buttons. (m&ms)

NOTE - you can also make plain gingerbread cookies without the icing and m&m's.
1Depending on the size of your cookie cutter you may end up with more Ginger Bread Men.
