Low Carb Christmas Pudding

Tis' the season to choose your carbs. Enjoy this delicious Low Carb Christmas Pudding.

This pudding does have more carbs than our other recipes, due to the dried fruit however compared to traditional Christmas Pudding it has half the carbs, and no added sugar.

It's also gluten free, and believe it or not, is made in the microwave in less than 15 minutes (don't knock it until you try it!!! - Unbelievably easy, fast and delicious)

No one will actually guess that this Low Carb Christmas Pudding is a healthy option.

 1/2 pack Protein Muffin Mix

 1 cup chopped apricot – 140g

 2.5 cup chopped prunes – 500g

 1/2 cup sultanas – 70g

 180g butter or coconut oil

 3/4 cup brandy - 180g

 1 teaspoon cinnamon

 1 teaspoon mixed spice

 1 teaspoon nutmeg

 2 eggs

 Juice & grated zest from 1 large orange


1Place in a microwave-safe bowl – all dried fruit, orange juice, orange zest & brandy.

2Microwave for 2 minutes to soften the fruit. Then add on top the coconut oil or butter and stir until melted.

3In a separate bowl combine cinnamon, nutmeg, mixed spice & Protein Muffin Mix.

4Add in the 2 eggs to the fruit mix and combine

5Pour fruit mixture into the dry mix and combine.

6Spray a 1.5-2L microwave-safe bowl with oil or grease with butter. Pour in pudding mix and even out. This step is important as you don't want your pudding to stick to the bowl when you try and turn it out.

7Place a lid or plate over the top.

8Cook for 5-7 minutes on medium power. Please make sure it is medium power. Usually I don't adjust power level on the microwave but if you cook this on high it will dry out. It may look a little under cooked when you take it out of the microwave, however due to the heat contained within, it will keep cooking.

9Let cool in the bowl for 15 mins then use a spatula to loosen from edges and turn out pudding. Even if you don't plan on eating your pudding straight away, you will need to turn it out whilst it's still warm, otherwise the butter / coconut oil will reset and you won't be able to turn it out. So turn it out, let cool then wrap in cling wrap and place back in bowl and keep in the fridge until required. At this point you may wish to drizzle a little more brandy on top to sink in - completely optional based on how much you love brandy!
