Italiano Protein Bites

Italiano Muffin Bites are the perfect option for a Friday or Saturday night nibbles and bubbles session.

 1 packet of Savoury Muffin Mix

 150g egg white or 3 eggs

 315ml water (1 1/4 cup)

 Handful of washed Basil chopped finely

 120g Mozzarella chopped into cubes

 270g (small jar) drained and chopped sun dried tomatoes.


1Preheat oven at 170 degrees

2Line a mini muffin tray

3In large bowl pour dry mix, chopped basil (leave some for garnish)

4in a separate bowl, whisk egg and water together.

5Combine the wet ingredients into the dry mix, and fold the sun dried tomatoes into the mix. ( leave some to sprinkle on top)

6Spoon the mix into the mini muffin tray about 1/2 way

7insert mozzarella cube into the muffin tray

8Spoon the mix on top to cover the cheese cube.

9Sprinkle the sun dried tomatoes on top

10Bake for 15-18mins or until golden.
