Protein Bread Bruschetta Recipe
Fancy a quick, easy and light lunch? Or maybe an entree for when you’re entertaining? This bruschetta recipe is perfect for an easy Sunday lunch or when you’re trying to impress the in-laws. A great recipe to enjoy in summer, especially when you can get fresh, local ingredients. It’s easy to make a bit in advance as well, just cover and refrigerate, then when you’re ready to serve, bring the mixture to room temperature and put on top of the toast. Also a great idea to serve with an antipasto plate – olives, sundried tomatoes, cheeses, salami and a glass of red!
This recipe serves 1, but it’s very easy to expand to suit however many you’re catering for.
4 slices protein bread 2 ripe tomoatoes 1/2 red onion 2 cloves garlic Handful fresh basil Handful fresh oregano Balsamic vinegar Parmesan Salt & Pepper to taste
Roughly chop the tomatoes, garlic and red onion Toast the protein bread Top the bread with the chopped tomato mix and drizzle with balsamic vinegar. Top with parmesan and salt and pepper to taste Enjoy on the balcony on a balmy summer evening!
