PEANUT BUTTER JELLY (Jam as us Aussies call it) Protein Pancakes! Taking some inspiration from the States!! This winning flavour combo couldn't get any better at only 4.4 g carbs per serve.
1 Serving (3 Pancakes)
1/4C (30g or 2oz) Protein Pancake Mix 50mls (1.6 fl oz) Milk of your choice (we used almond milk) 1 Egg 2 Tbsp (50g or 1.7 oz) PBCO Chia Jam (or you can use any jam you wish) 2 Tbsp (50g or 1.7oz) Peanut Butter
Heat fry pan and spray with oil. Prepare Pancakes as per packet instructions, combining Pancake Mix, 1 Egg and 50 ml of milk. Once pan is smoking reduce to medium heat and cook 3 pancakes approx. 10cm (4") in diameter. Place aside. To assemble pancake stack - spread 1 Tbsp of Chia Jam onto one pancake, stack another pancake and spread with 1 Tbsp of Peanut Butter, top with remaining pancake and spread remaining Tbsp’s of Chia Jam and Peanut Butter on top. Sprinkle with your favourite topping, we topped with crushed peanuts.
