Pavlova Pancakes

These Pavlova inspired Pancakes are perfect for a summer brekkie. Packed with 31.9g of Protein. These will keep you going all morning.


1/4 cup (30 g) Protein Pancake Mix 2 egg whites or 1 whole egg 50 ml milk of your choice --Topping 85g Greek yogurt (we used 1/2 tug plain Chobani 1/2 kiwi fruit 1/2 cup of mixed blueberries and strawberries 1 TB passionfruit pulp (1 passionfruit)

-- Step 1: Mix Combine all the ingredients in a medium mixing bowl. Using a whisk, mix thoroughly. Let the mixture sit for 5 minutes to thicken slightly -- Step 2: Preparation Lightly spray a frying pan with oil. Heat until almost smoking - this seals the pan and prevents sticking! Once hot, turn to a low heat and wait for 30 seconds -- Step 3: Pour Spoon the mixture into a non-stick pan on a low heat, forming 3 pancakes approx 10cm in diameter -- Step 3: Flip Once bubbles appear, flip each pancake and cook for an extra 30 seconds or until golden brown --Topping Spoon the yogurt on top of pancakes Sprinkle with the mixed fruit and spoon the passionfruit on top
