These Pavlova inspired Pancakes are perfect for a summer brekkie. Packed with 31.9g of Protein. These will keep you going all morning.

Ingredients

1/4 cup (30 g) Protein Pancake Mix

2 egg whites or 1 whole egg

50 ml milk of your choice
Topping

85g Greek yogurt (we used 1/2 tug plain Chobani)

1/2 kiwi fruit

1/2 cup of mixed blueberries and strawberries

1 TB passionfruit pulp (1 passionfruit)

Directions

Mix

Combine all the ingredients in a medium mixing bowl.
Using a whisk, mix thoroughly.

Let the mixture sit for 5 minutes to thicken slightly.

Preparation

Lightly spray a frying pan with oil. Heat until almost smoking - this seals the pan and prevents sticking!
Once hot, turn to low heat and wait for 30 seconds

Pour

Spoon the mixture into a non-stick pan on low heat, forming 3 pancakes approx 10cm in diameter

Flip

Once bubbles appear, flip each pancake and cook for an extra 30 seconds or until golden brown

Topping

Spoon the yoghurt on top of pancakes
Sprinkle with the mixed fruit and spoon the passionfruit on top.
