These Pavlova inspired Pancakes are perfect for a summer brekkie. Packed with 31.9g of Protein. These will keep you going all morning.
Ingredients

1/4 cup (30 g) Protein Pancake Mix
- 2 egg whites or 1 whole egg
- 50 ml milk of your choice

85g Greek yogurt (we used 1/2 tug plain Chobani)
- 1/2 kiwi fruit
- 1/2 cup of mixed blueberries and strawberries
- 1 TB passionfruit pulp (1 passionfruit)

Mix
- Combine all the ingredients in a medium mixing bowl.
Using a whisk, mix thoroughly.
Let the mixture sit for 5 minutes to thicken slightly.
Preparation
- Lightly spray a frying pan with oil. Heat until almost smoking - this seals the pan and prevents sticking!
Once hot, turn to low heat and wait for 30 seconds
Pour
Spoon the mixture into a non-stick pan on low heat, forming 3 pancakes approx 10cm in diameter
Flip
Once bubbles appear, flip each pancake and cook for an extra 30 seconds or until golden brown
Topping
- Spoon the yoghurt on top of pancakes
Sprinkle with the mixed fruit and spoon the passionfruit on top.
