Miss Florrie's Fantastic Halloumi & Corn Fritters

This amazing recipe was sent in by the equally amazing @missflorrie Halloumi and Corn Fritters are my go-to option when I go out for brekkie and these look as good or better than any I've had before. Even better is that because they use our Protein Pancake Mix instead of flour, they're higher protein and lower carb.

4 Serves

--The Fritters 3 cups corn kernels 2 eggs 3/4 small red onion 1/4 cup coriander the tsp salt 1 tsp cracked black pepper 1 tsp chilli flakes 3 tbsp chopped halloumi 1/4 cup Protein Pancake Mix 3/4 cup almond flour 1 tsp organic baking powder 3 tbsp coconut oil --Avocado salsa 1/2 diced tomato 1/2 diced avocado 2 tbsp chopped coriander 2 tbsp corn kernels 1/4 chopped red onion 2 tbsp lime juice 1 tsp chilli flakes 1 tsp salt 1 tsp cracked black pepper --Optional Pan-fried halloumi for garnishing

--The Fritters Place 2 cups of corn kernels, onion, eggs, coriander, salt, pepper in a blender and whizz until most of the corn is puréed but still slightly lumpy and not completely smooth. Swirl through remaining corn kernels, halloumi, chilli flakes, Protein Pancake Mix, almond meal and baking powder until just combined. Heat pan with coconut oil and use 2 tbs corn fritter batter per pancake To serve, stake corn fritters on each plate, and top with avocado salsa and extra coriander and halloumi --Avocado salsa Combine all ingredients, toss very gently ENJOY!! ✨?✨

This recipe is not super low carb mostly due to the corn kernels. You could create a similar fritter, but MUCH lower carb by swapping out the corn kernels for the same weight of grated zucchini. Just make sure to squeeze out all the excess moisture first!
