Low Carb Mocha Cupcakes
Who doesn't LOVE chocolate and coffee? 😍 These Low Carb Mocha Cupcakes combine two of our favourite flavours into one sweet treat with only 6g carbs!
1 packet of Anna's Low Carb Vanilla Cupcake Mix 2 eggs 1 cup (250mL) milk of choice (we used unsweetened almond milk) 1/3 cup (70g) melted butter or coconut oil 2 tablespoon (20g) instant coffee (to stir through the finished batter) 1/2 cup (100g) choc chips --Icing 1/3 cup (75g) Anna's Low Carb Icing Mix 1 tablespoon (10g) Cocoa Powder (to swirl through icing)
Preheat oven to 180 degrees Prepare the cupcake tin with baking paper cases/ or use a silicon baking tray. Pour the Vanilla Cupcake Mix into a bowl. In a separate bowl whisk together the melted butter, eggs and milk. Combine the wet ingredients to the cake mix and mix well. Stir through the instant coffee and choc chips, then portion into 12 oil sprayed patty cases. Bake on the top shelf got 15-20 mins, rotating halfway. Remove from oven and cool on a cooling rack Once cooled completely, you can ice. Ice with regular vanilla icing with cocoa swirled through the icing mixture. --NOTE This recipe can also be made with Anna's Low Carb Chocolate Cupcake Mix
