White Choc Macadamia Protein Cookies

 1/2 pack of Protein Cookie Mix

 ¼ cup warm water

 60g butter, melted

 50g roasted macadamias, chopped

 100g of sugar-free white chocolate of choice


1Preheat oven to 160g degrees and line a cookie tray with baking paper.

2Combine the dry ingredients (mix, macadamias and chocolate) in a large bowl. Add melted butter and warm water. Work with the back of the spoon to combine. Mixture will be crumbly but hold together when rolled in a ball.

3Take a heaped spoonful of the mixture, roll into a ball, flatten and shape the edges. Place on a lined baking tray. Repeat for the remaining cookies.

4Place cookies in the oven and bake for 15 minutes or until golden brown. Remove from the oven, let cool for 10mins then enjoy!

We used Vitawerx White Chocolate for these cookies.
