White Choc Macadamia Protein Cookie

White chocolate and macadamia is a classic cookie flavour. Our White Choc Macadamia Protein Cookie is a great LowER Carb treat with 15g of protein. Great for those who have a little more flexibility with the carb intake.

  • Yields: 10 Cookies


1/2 packet (175g) of Plant Based Protein Cookie Mix

1 cup of chopped macadamias (100g)

1/2 cup white chocolate chips

1 tsp (5ml) vanilla essence or paste

1 egg or an Egg Replacer of choice

2 Tb butter (40g) or coconut oil

1/4 cup milk of choice (60ml)


1Preheat a fan-forced oven to 160°C and line a flat tray with baking paper.

2Place all dry ingredients (cookie mix, macadamias, white, choc chips) in a large bowl and combine.

3Add the butter, egg and vanilla essence to the dry mix and combine well. Cookie mixture should be crumbly but hold together when rolled into a ball. If the dough is too crumbly add a tablespoon of milk of choice.

4Take a heaped tablespoonful of the mix, roll into a ball then flatten and shape the edges.

5Place on your lined baking tray. Repeat process for the remaining mix

6Place cookies in preheated oven and bake for 20-25 minutes or until golden brown.

7Remove from oven and transfer to a cooling rack.
