Low carb cinnamon scrolls that are sugar-free & delicious!
Normally, cinnamon scrolls are made from a bread dough with yeast, but these are made with our Low Carb Pancake Mix with an easy cinnamon swirl and Low Carb Icing.
These fluffy little bites will definitely satisfy a sweet carb craving, and make a perfect morning or afternoon tea! You don't have to be perfect with these, which makes them so easy to make.

- Yields 6 scrolls or 12 mini scrolls
Ingredients
1 cup of Low Carb Pancake & Pikelet Mix (120g)
3/4 cup of milk of choice
2 eggs
2 TBs cinnamon (pick your level of cinnamon-ness)
2 TBs (40g) butter
2 TBs Low Carb Sugar-free Icing Mix
Topping
2 tablespoons Low Carb Sugar-free Icing Mix
Approx. 1-2 tablespoons of hot or boiled water



Directions
1Preheat the oven to 160°C and lightly grease a muffin tin with a spray of oil or melted butter. Or use a lined muffin tin or silicone tray.
2Combine the Pancake Mix with the eggs and milk to make a pancake batter.
3Separately, melt the butter in the microwave and stir in the cinnamon and 2 tablespoons of the Icing Mix.
4Spoon 1 tablespoon of Pancake Mix into each muffin case, then add a 1 teaspoon dollop of the cinnamon mix. Repeat once more with one more tablespoon of pancake mix and one more teaspoon of the cinnamon mix.
5With a small knife, swirl the mix (don’t worry too much, it doesn’t have to be a perfect swirl!)
6Place in the oven for 15 minutes until risen and cooked through.
7In the meantime, make the topping by combining the Low Carb Icing with hot water. Add the water slowly until you reach a drizzle consistency. You’ll need no more than 2 tablespoons of water.
8Take the scrolls out of the muffin tin and allow to cool slightly on a rack.
9Drizzle the tops with the icing mix.
