  • Yields 3 pancakes

1/4 cup (30g) Protein Pancake Mix

1 egg or 2 egg whites

 50ml milk of your choice

 2 teaspoon Cinnamon

1/2 cup of peeled and chopped Apple

 50g Walnuts

1In a mixing bowl, add the Protein Pancake Mix, egg, milk and a teaspoon of cinnamon. Stir and sit for 5 mins to thicken.

2In a pan over a medium heat, pour out three pancakes – approx. 10cm in size.

3When the pancakes start to bubble, flip and cook for a further 30 seconds.

4While the pancakes cook, slice the apple into cubes and place in a pan over low heat. Sprinkle over the rest of the cinnamon, and cook until the apple is warm and has softened slightly.

5Chop the walnuts to your desired consistency.

6Top the pancakes with the apple and walnuts, adding any sweetener, sugar free syrup or other toppings you’d like.
