Who doesn't love a lamington? This Aussie classic is a favourite of many. We thought we would have a go at making a low carb version, and we are VERY happy with the results 😍
1/2 cup Sweetener (like erythritol or monk fruit)
1 cup Sweetener
Preheat oven to 180°C (350°F).
Line a square baking dish with parchment paper.
In a bowl, mix Almond Flour, Coconut Flour, Baking Powder, and Salt.
In another bowl, whisk Eggs, melted Butter, and Vanilla Extract.
Combine the wet and dry ingredients to form a batter.
Pour into the baking dish and bake for 20-25 minutes or until a toothpick comes out clean. Let the cake cool, then cut into squares.
For the coating, mix Cocoa Powder, Powdered Sweetener, and Boiling Water to make a chocolate sauce.
Dip each square into the chocolate sauce, then roll in Desiccated Coconut. Allow to set before serving.
