Ingredients

1/2 pack Protein Cookie Mix
- 2 Tb (15g) dried ginger
- 1/4 cup (50g) chopped dates
- 1/2 cup (70g) chopped prunes
- 1/4 cup (60ml) boiling water
- 120g butter, melted
Directions
- Preheat a fan-forced oven to 160°C and line a flat tray with baking paper.
Place all dry ingredients (cookie mix and ginger) in a large bowl and combine.
In microwave-safe bowl combine dates, prunes, boiling water and butter and microwave for 60 seconds to infuse all the flavours/caramelise.
Add the wet ingredients (dried fruit mix, melted butter) to the dry mix and combine well. Add an extra tablespoon water only if needed.
Take a heaped tablespoonful of the mix, roll into a ball, then flatten and shape the edges.
Place on your lined baking tray. Repeat process for the remaining mix.
Place cookies in preheated oven and bake for 15 minutes or until golden brown.
Remove from oven and transfer to a cooling rack.
Recipe Note
You can use coconut oil in place of butter.
Add 50g chopped walnuts or pecans for extra crunch or if you have some wiggle room in your carbs, adding some rolled oats for extra chewy goodness.
