Smoked Salmon Blinis

Looking for an entrée that’s just a little bit more fancy? Or a way to impress the wife on your anniversary? These are a great idea for entertaining at home, at a cocktail party, catering Christmas Parties or to take to that fancy BBQ! Enjoy with a glass of Champagne for that special celebration. These Smoked Salmon Blinis look amazing on any table and are quick and easy to prepare; they can even be made in advance if you’re tight for time. They haze zero sugar but still taste absolutely amazing!

24 Blinis

80g Protein Pancake Mix 2 eggs or 4 egg whites 100g low fat ricotta Sprinkle of Cumin Salt & pepper to taste 1 Cucumber 150g Smoked Salmon Cream Cheese Dill --Equipment 1 Large Mixing Bowl 1 Egg Whisk or electric beaters 1 large non stick pan

In a large bowl, combine all dry ingredients. Lightly whisk the eggs and combine all liquid ingredients. Slowly add liquid ingredients to the dry mixture, mixing to combine as you go. Once combined let the mixture sit to thicken for 10 minutes. Heat a large non stick pan until its nearly smoking – then turn down to low (this helps to ensure the mixture won’t stick). Scoop out mix into small, even portions with a teaspoon. Cook on low until bubbles start to form and you can see the edges are holding together. Using an egg flip, turn the blinis and lightly cook on other side until golden brown. Once cooled, top each of the blinis with cream cheese, a small roll of smoked salmon, 1/2 a cucumber slice and garnish with dill. Pour a glass of Champers & Enjoy!
