Easy Low Carb Protein Breakfast Bars (with Oats!)

Need a filling brekkie on the go? Our Oaty Protein Breakfast Bars are the perfect grab and go meal. Packed full of healthy ingredients and just over 12g protein, 💪🏼 these bars will keep you going until your next meal.

½ a packet (175g) of Plant Based Protein Cookie Mix ½ cup (50g) shredded coconut ¼ cup (20g) sunflower seeds ½ cup (50g) flaked almonds ⅓ cup (30g) rolled oats 1 tablespoon Low Carb Icing 100g chopped dark chocolate (we used Lindt 90%) 70g melted butter 1/3 cup (80ml) milk of choice 2 eggs --Notes If you're not a fan of dark chocolate, you can use Well Naturally Milk Chocolate :)

Preheat oven at 160 degrees and line a small square cake tin In a large bowl combine the dry ingredients - cookie mix, flaked almonds, coconut, sunflower seeds, chopped chocolate, icing and oats. In another bowl combine the milk, melted butter and eggs. Combine the wet ingredients with the dry, gently fold together evenly then spread the mixture into a lined tray. Bake for 25 mins or until golden, then allow it to cool. Pop the slab in the fridge for 4 hrs minimum (this makes it easier to slice into bars). Slice into 10 bars. Serve at room temperature or pop in the microwave for 30 secs to warm it up. storage The bars will keep in the fridge for up to 5 days. You may also wish to freeze them for up to 3 months. Thaw them out in the fridge overnight when needed.
