Low Carb Fish 'n' Chip Pizza

Kiwi Inspired recipes to celebrate the launch of our products in New Zealand… Impress your mates across the ditch with this awesome low-carb Fish 'n' Chip pizza made using our Protein Pizza Base mix. It sounds bizarre, but it is truly amazing. Make sure to use the freshest Hoki fillets you can find (from NZ of course!). #loveyourpizza

1 Large Pizza (2 serves)

--For the Base 80g Protein Pizza Mix (1/4 packet) 3 large eggs 60ml water (1/4 cup) 10ml olive oil (optional) --Toppings 2 heaped Tbs tomato paste (make sure there's no added sugar) 150g fresh hoki fillets 100g cottage cheese 100g sweet potato small handful of fresh parsley, chopped lemon to serve

--Preparation Set your oven to 220°C and preheat for 15 minutes Line a 30cm pizza tray with baking paper (not greaseproof paper) Line another baking tray with baking paper and lightly spray with oil --The Chips Peel the sweet potato and cut it into thin (3mm) slices Place the sweet potato slices onto the baking tray and lightly spray with oil Put the baking tray into the oven on the top shelf --Make the Base Add all ingredients into a large mixing bowl and whisk to combine into a smooth liquid batter. Pour the mixture into the center of the pizza tray lined with baking paper, and spread it to the edges. You can use the back of a spoon to shape it evenly. Pop the pizza base into the oven on a middle shelf, turn the oven down to 200°C and bake for 20 minutes or until golden brown. --The Fish While the pizza base is cooking and the sweet potato chips are getting nice and crispy, it's time to cook the fish. Add a small drizzle of olive oil to a large frying pan and place on the stove on a high heat. Once the oil is nice and hot, gently place the Hoki fillets into the pan. Cook the fillets for a couple of minutes on either side until they're almost cooked through. You don't want to over-do it here as the fish will finish cooking in the oven. --Topping Time Spread the tomato paste evenly over the base using the back of a spoon then place small dollops of the cottage cheese evenly across the base. Once the sweet potatoes are nice and golden brown, remove them from the oven and place them on the pizza base. Using your hands, flake the fish into small chunks across the base. -- Bake the Pizza Pop the pizza back into the oven for a further 10 minutes or until golden brown on top. Remove from the oven and top with the fresh parsley and a big squeeze of lemon juice Serving with another lemon wedge and enjoy ???
