Apple Crumble Protein Pancakes
These low carb, Apple Crumble Pancakes posted by Sarah on Instagram looked so good I had to ask for the recipe! A quick and easy pancake serving suggestion that is really tasty! Enjoy your guilt free, low carb pancakes :)
1/4 cup (30g) Protein Pancake Mix 1 egg or 2 egg whites 50ml milk of your choice 2 teaspoon Cinnamon 1/2 cup of peeled and chopped Apple 50g Walnuts
In a mixing bowl, add the Protein Pancake Mix, egg, milk and a teaspoon of cinnamon. Stir and sit for 5 mins to thicken. In a pan over a medium heat, pour out three pancakes – approx. 10cm in size. When the pancakes start to bubble, flip and cook for a further 30 seconds. While the pancakes cook, slice the apple into cubes and place in a pan over low heat. Sprinkle over the rest of the cinnamon, and cook until the apple is warm and has softened slightly. Chop the walnuts to your desired consistency. Top the pancakes with the apple and walnuts, adding any sweetener, sugar free maple syrup or other toppings you’d like. Enjoy!
