FUN Halloween Cupcakes!
Baking some treats for Halloween?
Make a batch (or 2) of our Simply Low Carb Cupcakes. Choose either Chocolate or Vanilla and have some fun with our icing.
Pumpkin Cupcakes.
Ingredients
- Sugar-Free Icing Mix
- Apple for the pumpkin stalk
- Orange and green food colouring
Method
- Make Icing as per instructions on pack.
- Separate ¼ of icing and add green dye, and added orange dye to the remaining icing.
- Using a spoon or knife, ice 12 cupcakes with orange icing.
- Chop small chunks of apple to make the pumpkin stems.
- Using a spoon to help, dip the apple into the green icing to coat. Add coated apple to tops of orange iced cupcakes using tweezers to hold it and push into the top of cupcake

Monster Cupcakes
Ingredients
- Sugar-Free Icing Mix
- Dark Chocolate Chips
- Mini Marshmallows
- Food Colouring (we used purple but you could make any coloured monsters)
Method
- Make icing as per pack instructions.
- Add purple food colouring and mix through.
- Fill into a piping bag with a star tip or alternatively place into large ziplock bag and cut corner. in a star shape.
- Using small piping motions add crazy purple icing to 12 cupcakes
- Add mini marshmallow and chocolate chips as eyes. You can use a dot of icing as the “glue” to stick the choc chip on to the marshmallow. - we used tweezers to place them easily.

Spooky Ghost Cupcakes
Ingredients
- Sugar-Free Icing Mix
- Dark Chocolate Chips
Method
- Make icing as per pack instructions.
- First, fill your piping bag (alternatively place into large ziplock bag and cut corner) If using a piping bag select the plain circular nozzle.
- Swirl and pipe the white icing onto 12 cupcakes.
- Add choc chips as eyes - we used tweezers to position easily.

Spider Web Cupcakes
Ingredients
- Sugar-Free Icing Mix
- Dark Choc Chips
- Black food colouring
Method
- Make icing as per pack instructions.
- Ice your cupcakes using a knife or a spoon, try to keep the icing flat across the cupcake.
- In the microwave, melt dark choc-chips. Add black food dye to chocolate and mix well (you can leave as a dark chocolate colour, without the black colouring if you like) Let the chocolate sit for 2 minutes to cool and thicken slightly.
- Fill a piping bag with a narrow tip with black chocolate or alternatively fill ziplock bag and cut corner.
- Pipe a black spiral on top of the cupcake.
- Using a toothpick, drag the icing from the centre of the circles outwards to create a spider web design.

HELPFUL TIP 👉🏼 To fill your piping bag. – Using a tall glass, place icing bag into glass and fold top of bag around rim of glass. This will keep your piping bag upright and allow you to have two hands to easily fill with icing and save on some mess.
