Sugar-Free Lemon Curd
Low Carb Dessert
1/3 cup Sugar Free Icing Mix (75g)
- 6 eggs
- 125g soft butter (not margarine)
- 1 cup freshly squeezed lemon juice (pulp was added back in for extra goodness)
- Whisk the lemon juice, eggs, soft butter and icing mix together in a bowl
Place in a heatproof bowl over a pot of water and cook on low heat until it thickens.
Let it cool then pour the curd in prepared biscuit base or biscuits.
