Mini Low Carb Pizzas

Directions

1. Preheat a fan-forced oven to 180°C and line 2 trays with baking paper (not greaseproof paper).

2. Place 160g (approx 1 1/2 cups) of Protein Pizza Base mix into a large mixing bowl. Add the eggs, water and olive oil (if using) and whisk to combine into a smooth liquid batter.

3. Spoon the batter on to the baking paper using the back of a spoon spread out to form a small pizza, repeat to create 6 mini pizza's roughly 15cm in diameter.

4. Place in a pre-heated oven and bake for 15-20 minutes or until golden brown. Remove from the oven.

5. Add your favourite pizza toppings then pop the pizza back into the oven for a further 10-15 minutes or until golden brown on top.

6. Store your baked, un-topped pizza in the fridge (1-4°C) for up to 5 days or can be frozen (-18°C) for up to 3 months.
