Ingredients: 4 large Egg Whites; 1/4 tsp Cream of Tartar; 1/2 cup Erythritol (ground into a powder); 1 tsp Vanilla Extract; 1 tsp White Vinegar; 1 tbsp Cornstarch (optional, can be omitted for stricter low carb); Thickened Cream (Whipped); Mixed Berries (strawberries, blueberries, raspberries)

The classic Australian pavlova, only sugar-free! It's the perfect treat for sharing with family and friends, and so simple to make.

Ingredients

4 large Egg Whites
1/4 tsp Cream of Tartar
1/2 cup Erythritol (ground into a powder)
1 tsp Vanilla Extract
1 tsp White Vinegar
1 tbsp Cornstarch (optional, can be omitted for stricter low carb)

Topping:

Thickened Cream (Whipped)
Mixed Berries (strawberries, blueberries, raspberries)

Directions

Preheat oven to 120°C (250°F).
Line a baking sheet with parchment paper.
Beat egg whites with cream of tartar until soft peaks form.
Gradually add erythritol, beating until stiff peaks form. Gently fold in vanilla extract, vinegar, and cornstarch (if using).
Shape into a circle on the baking sheet. Bake for 60-75 minutes.
Turn off the oven and let it cool inside.
Top with whipped cream and berries before serving.
