Protein Bread

I love this product! I'm type 1 Diabetic so knowing exactly the carb and protein in a product is paramount in managing my sugars. Being able to have PB on toast with a black coffee and no blood sugar spike is epic! Thank you and also to Rose who packed my order.. The sticker was a nice little touch that brought a smile to my face :)

Great Low Carb Bread

I have used Anna's Low Carb baking products before and now she has joined with Luke a PBCo I decided to try the Protein Bread mix. It’s so easy to make up and bake in the oven. And it’s delicious. I have 2 pieces each morning with vegemite or low carb jam. And only 1.7g of carbs to start my day. I will definitely buy more.

Australia’s Lowest Carb Bread, with just 1.7 g of carbs per serve – that’s 95% less carbs than regular wholegrain bread!#

To made a loaf of Protein Bread, you will need:

  • 1 packet of Protein Bread Mix
  • 1 ¾ cups water (440mL)
  • 2 whole extra large eggs (or 100mL egg whites)
  • 1 tablespoon of white vinegar (20mL)

Prepare – Preheat a fan forced oven to 180°C and line a small loaf tin with baking paper.

Mix – Empty contents of the Protein Bread Mix pack into a large bowl. In a separate bowl, whisk together water, eggs and vinegar. Pour the wet mix into the dry mix and gently fold until just combined.

Pour – Pour the mixture into your lined loaf tin and spread out with a spatula. Sprinkle with your favourite seeds if you like.

Bake – Place on the top shelf of a pre-heated oven and bake for one hour, rotating halfway through to ensure even cooking. After baking, remove from tin and place on a cooling rack for 2 hours.

Chill & Slice – For best results, refrigerate your loaf overnight before slicing with a sharp serrated bread knife.

Storage – Protein Bread must be stored in the fridge (1-4°C) for up to 5 days, or can be frozen (-18°C) in sandwich bags for up to 3 months.

3 quick tips for the perfect loaf of Protein Bread

  1. We recommend using a loaf tin measuring 9 cm x 20 cm. A larger tin will result in a wider, but not as tall loaf.
  2. Don’t use electric mixers or over-mix the mixture, this will prevent the bread from rising properly.
  3. All ovens are unique. If in doubt, cook for another 10 min.
