Sugar-Free Lemon Curd

Our Sugar-Free Lemon Curd is perfect for tarts, melting moments or spread of scones or cupcakes.

Ingredients

 1/3 cup (75g) Low Carb Icing Mix

 6 eggs

 125g  soft butter (not margarine)

 1 cup (250ml) freshly squeezed lemon juice (pulp was added back in for extra goodness)

Directions

1Whisk the lemon juice, eggs, soft butter and icing mix together in a bowl

2Place in a heatproof bowl over a pot of water and cook on low heat until it thickens.

3Low Carb tart base

4Let it cool then pour the curd in prepared biscuit base or biscuits.
