2 slices of Protein 6 Seeds Bread Mix prepared as per packet
1 egg or 2 egg whites
1 TB (20ml) almond milk (or milk of your choice)
1 TB (20ml) water
1 Teasp Vanilla extract
1/4 cup (60g) ricotta cheese
1/2 cup (40g) frozen mixed berries
Sugar free Maple
You can use any of our bread mixes for this recipe. If you do use one other than what is listed, you will need to recalculate the nutrition, if you are tracking macros :)

1Heat a non-stick frying pan over a medium-high heat.
2In a large bowl whisk the eggs, milk and vanilla together. Place the Protein Bread slices into the mixture and let sit for a few minutes, turning the bread if the mixture doesn’t cover both sides. You want to make sure the mixture is absorbed all over the bread.
3While the bread’s absorbing the mixture, place mixed berries and water in a microwave safe bowl and heat for 2 minute or until bubbling. Remove and mash with fork if desired. (times may vary depending on microwave, watch carefully to avoid overheating/flowing)
4Turn the pan down slightly, grease with butter if necessary, and place the bread slices in.
5Cook for 2 -minutes
6Remove the bread from the pan, top with ricotta and berries, drizzle with sugar free maple or other toppings.
