275 ml coconut cream (1 small can)
125 ml water
1 Tb coconut oil
1 cup Low Carb White Rice

NOTE: 1 CUP of uncooked rice = 3 CUPS cooked rice
1Place 1 cup of uncooked Low Carb White Rice into a bowl and pour water into the bowl to cover the rice.
2Using a spoon, mix the rice around - the water will become cloudy as you rinse the rice. Rinsing the rice removes the starch to prevent the rice from going gluggy when cooked.
3Drain off excess water or pour through a sieve. Prior to adding the rice to the saucepan, to prevent rice from sticking, grease the bottom of the pot with the tablespoon of coconut oil.
4Place washed rice into a saucepan with a small can (270mls) coconut milk & ½ cup of water.
5Bring to the boil, then turn down heat and simmer for 25 minutes.
6Remove from heat, and stand covered for 5-10 mins prior to serving.
7Fluff up with a fork & add to your favourite curry or stir fry and garnish with lemon and season with salt if you wish.
Macros based on White Rice Blend, but you can use any of our blends for this recipe.
