Ingredients
1 pack Protein Banana Bread
2 large overripe bananas, mashed (200g)
3 eggs
1/3 cup milk of choice
1/3 cup oil
Extra banana to decorate (optional)
Important tip
Like other banana bread recipes, you’ll get the best tasting loaf by using overripe bananas – brown and spotty are ideal!
Recipe tweak
Add 100g of chopped walnuts for a beautiful banana and walnut loaf.

Directions
1Preheat a fan-forced oven to 160°C and line a small loaf tin (9cm x 20cm) with baking paper, or use a silicone loaf tin.
2In a large bowl whisk together milk, oil, eggs and mashed banana, then add the Protein Banana Bread Mix to this and combine well.
3Spoon batter ino a lined loaf tin and even out. Decorate with extra banana if desired.
4Place in preheated oven, and bake for 60 minutes. Test with a skewer. After baking remove from tin and place on cooling rack for approx 2 hrs.
Chill & Slice
1Protein Banana Bread must chill for at least 2 hours before slicing with a sharp serrated bread knife. For best results we recommend chilling overnight, wrapped in a tea towel before slicing.
Storage
1Protein Banana Bread must be stored in the fridge (1-4°C) for up to 5 days, or in the freezer (-18°C) in sandwich bags for up to 3 months.
