Mexican Beef Burrito Bowls with P300 Protein Rice

How good are burrito bowls? Make yours lower carb and higher protein with P300 Protein Rice. Top with tomato, onion, sour cream, coriander, chilli, and a wedge of lime.

  • Yields: 2 servings

Ingredients

PROTEIN RICE:

2/3 cup P300 Protein Rice

2 cups water

1 tin of black or red kidney beans

Pinch of salt

MINCE:

500g beef mince

1 onion

1 clove of garlic

2-3 teaspoons paprika

2 teaspoons ground cumin

1 teaspoon dried oregano

Good pinch of salt

Good crack of black pepper

1/2 teaspoon ground chilli powder

1 tin of tomatoes

1 tablespoon of tomato paste

Splash of oil

TOPPINGS:

1 avocado

1 bag of chopped cos lettuce

1/2 punnet of cherry tomatoes

1/4 red onion

1/2 bunch fresh coriander

2 tablespoons sour cream

1/2 lime

Directions

1Make the P300 Protein Rice according to the instructions on the back of the pack. When the rice is cooked, stir in the drained beans.

2To make the mince, finely dice the onion and saute in a pot with a splash of oil for a few minutes. Add in the beef mince, garlic, salt and all the spices (oregano, paprika, cumin, chilli).

3Break up the mince with a wooden spoon and saute for a few minutes until browned.

4Add in the tin of tomatoes and tomato paste, stir in, cover and let it simmer while the rice is cooking for 20 minutes or more, until the liquid has absorbed.

5Prepare the toppings. Chop the tomatoes, finely dice the onions, chop the fresh coriander, etc.

6To compile the burrito bowls, assemble your bowls with the lettuce, rice and mince, and top with tomato, onion, sour cream, coriander, chilli, and a wedge of lime.
