For the Chicken
2 tablespoons fresh-squeezed lime juice
1 tablespoon oil
1 large clove garlic, minced
1/2-1 teaspoon ground chilli
1 teaspoon each ground cumin and salt
1 tablespoon fresh chopped coriander, (optional)
500g chicken breast or thighs, skinless and boneless, cut in strips.
2 large capsicums, cut into strips - we use red & green
For the Rice
1.5 cups (210g) pre-cooked Low Carb Ancient Grains
For the Bowl
3 cups Iceberg or Cos lettuce washed
1 punnet cherry tomatoes
1 avocado peeled, seeded and sliced
Sour Cream and salsa of choice

NOTE: 1 CUP of uncooked rice = 3 CUPS cooked rice
For the Rice
1Make a batch of Low Carb Ancient Grains as per instructions on the pack
For the Chicken & Capsicum
1In a large shallow bowl, combine lime juice, oil, garlic, cumin, salt, chili and coriander; mix together. Slice the chicken thighs into strips and and If time allows, let marinate for 30 minutes.
2Heat a large non stick pan on medium-high heat until smoking. Add a drizzle of olive oil to lightly coat the bottom of the pan. Sear the chicken on both sides until golden, charred and cooked right through (about 8 minutes per side, depending on the thickness of your fillets). Flip them a couple of times while cooking so they get a nice even char.
3Transfer chicken to a warm plate, loosely tent with foil and let rest.
4Add the capsicum to the pan (drizzle with a little extra oil only if needed), and cook until soft and slightly charred. Season with salt and pepper.
1Combine lettuce, beans, capsicums, tomatoes, shredded cheese into 4 bowls. Arrange chicken strips into bowls. Top each with avocado, dollup with sour cream & salsa then garnish with fresh coriander.
1Leftover rice - store it in an airtight container in the fridge for up to 3 days.
Macros based on Ancient Grain blend, however you can make this with any of our blends.
