- Yields 24 mini arancini balls
1 Small Cauliflower bulb (400g) grated
200g Shredded Pizza blend cheese
3 TB Pesto of Choice (I used Salca sundried tomato pesto)
1/2 cup (60g) Almond Flour
Salt and Pepper to taste
100g of Lupin flakes
Italian mixed herbs (dry mix)
Premium Almond Flour (800g)AUD$ 14.95
1In a large bowl mix the grated cauliflower, cheese, egg and pesto (use clean hands to combine, its easier)
2Add in the almond flour, this helps bind the mix. The mix should be the consistency of slightly sticky but can be rolled into balls.
3Prepare the crumb mix. Then roll each ball into the crumb mix.
4Pop the crumbed mini arancini on a tray and in the fridge for 30mins to set.
5Preheat the oven at 170 degrees (while they are chilling in the fridge)
6Bake for 15-20mins or until golden.
1You can use any pesto or shredded cheese combo you like!
