Irish Cream Doughnuts

Ingredients

 1 packet of Low Carb Chocolate Cupcake Mix

 1 cup (250ml) milk of choice (we use unsweetened almond milk)

 β…“ cup (70g) butter, melted.

 2 eggs.

Ingredients for the icing

 200g dark chocolate of choice (we use Lindt 90%)

 200 ml of cream (at room temperature)

 β…“ heaped cup (75g) of Low Carb icing Mix

 ΒΌ cup (60ml) Irish Cream (We used the Aldi brand)

Note

  If you do not wish to use the Irish cream, you will need an additional 60ml of cream (this is in addition to the 200ml listed)

Directions

1Preheat oven to 180 degrees and spray your doughnut tray with oil to avoid sticking. (Our doughnut tray is 9 cm in diameter)

2In one bowl, place the chocolate cake mix and in a separate bowl, combine the eggs, milk and butter.

3Add the wet mix to the dry mix and fold it through to combine well.

4Spoon the mixture into the doughnut mould. We used about 4 heaped teaspoons per doughnut (this will vary on the size of your tin).

5Bake for 15 mins. (Again depending on size this will change) Small doughnuts bake for 10 mins. Check with a skewer and go from there.

6Once baked, allow the doughnuts to cool in the tray for a few minutes. Then when the doughnuts are cool to touch, slightly twist to loosen and pop doughnuts onto a cooling rack and allow to cool completely before icing. Refrigerate 30 minutes if you can, it just helps the icing set!

Method for Chocolate Doughnut Icing

IMPORTANT: Chocolate does not like water - make sure your bowls are 100% dry, otherwise, the chocolate will split resulting in lumpy icing.

1Melt the 200g of dark chocolate in a large microwave-safe bowl for 90 seconds. Using electric beaters or mix master, slowly pour in the 200ml cream, beating on low as you go.

2Add the 75g of icing mix and the ΒΌ cup Irish cream or additional cream and beat on low speed until all combined.

3Check that your doughnuts are cool enough, and spoon on your icing and add sprinkles if desired.

4Note: If you notice your icing start to set, just pop it into the microwave for 20 seconds and it will become oozy. It will start to set once on the doughnuts.

Notes

1You can make these any size you like to suit your macros. If you don’t have a doughnut tray, these would work perfectly as cupcakes.

Macros based on 10 doughnuts and includes the Irish cream.
