Pancakes are a classic Saturday morning brunch option... and they no longer have to be full of sugar and refined carbs!
The simple recipe using The Protein Pancake mix is Low Carb, High Protein and Gluten Free so you can put pancakes back on the menu every day! The recipe below makes 1 serve of Pancakes (3 Pancakes)

1/4 cup (30 g) Protein Pancake Mix
Step 1: Mix
1Combine all the ingredients in a medium mixing bowl.
2Using a whisk, mix thoroughly.
3Let the mixture sit for 5 minutes to thicken slightly
Step 2: Preparation
1Lightly spray a frying pan with oil. Heat until almost smoking - this seals the pan and prevents sticking!
2Once hot, turn to a low heat and wait for 30 seconds
Step 3: Pour
1Spoon the mixture into a non-stick pan on a low heat, forming 3 pancakes approx 10cm in diameter
Step 3: Flip
1Once bubbles appear, flip each pancake and cook for an extra 30 seconds or until golden brown
