1 cup (250ml) milk of choice (we used unsweetened almond milk)
1/3 cup (70ml) melted butter
1/3 cup (75g) of Simply Low Carb Sugar-free Icing Mix
½ tub cream cheese (125g)
2 tbsp butter (40g)
1 tsp water (10ml)
Yellow and Green food colouring
optional - matching sprinkles
Low Carb Vanilla Cupcake Mix (220g)AUD$ 9.95
1Preheat a fan forced oven to 180°C and prepare cupcake tray with 12 wrappers.
2IMPORTANT: Spray the inside of wrappers with oil to avoid any sticking (or use a silicone tray).
3 Empty contents of this pack into a large bowl.
4In a separate bowl, whisk together milk, eggs and melted butter.
5Pour this wet mix into the dry cupcake mix and gently fold until just combined.
6Using a tablespoon, portion mix evenly into the 12 cupcake wrappers. Ensure tops are smooth and even.
7 Place on the top shelf of the preheated oven, and bake for 15-20 minutes. Rotate tray at halfway to ensure even baking. Remove cupcakes from oven and place on a cooling rack.
1IMPORTANT – Cupcakes MUST be cooled completely before icing otherwise your icing will melt.
2Place butter and cream cheese in microwave for 30 seconds to soften.
3 Place soft butter and cream cheese in a large bowl, then add the Low Carb Icing mix & water.
4Divide the mix in half and put one of the coloured food colourings in (a few drops) Using an electric mixer, beat until light and fluffy.
5Repeat the above step with the second half of the mix with the other coloured food colouring.
6Ice your cupcakes and add sprinkles (if you have them)
