A great keto-friendly chocolate craving crusher! Our Choc Coconut Rough Protein Cookies will help with that 3pm need for a little something. Under 5g carbs per cookie.
1Preheat a fan-forced oven to 160°C and line a flat tray with baking paper.
2Make the Chia 'Eggs' 15 minutes ahead of time.
3Place all dry ingredients (cookie mix, cocoa powder and coconut) in a large bowl and combine.
4Combine the ready-prepared chia 'eggs', milk of choice and melted coconut oil.
5Add the wet ingredients to the dry mix and combine well. The cookie mixture should be crumbly but will hold together when rolled into a ball. If the dough is too crumbly, add another tablespoon of milk of choice.
6Take a heaped tablespoonful of the mix, roll into a ball, then flatten and shape the edges.
7Place on your lined baking tray. Repeat process for the remaining mix.
8Place cookies in preheated oven and bake for 20 minutes or until golden brown.
9Remove from oven and transfer to a cooling rack.
