Need to satisfy a cherry ripe craving? If so, these protein cookies are for you. Just under 7g carbs and close to 12g protein, a super filling snack or meal to satisfy your cherry chocolate cravings.
1/2 packet (175g) Plant Based Protein Cookie Mix
2 chia 'eggs' or 2 eggs
1Preheat a fan-forced oven to 160°C and line a flat tray with baking paper.
2Defrost cherries in the microwave and squeeze to remove liquid.
3Make the chia 'eggs' 15 minutes ahead of time.
4Place all dry ingredients (cookie mix, cocoa powder and coconut) in a large bowl and combine.
5Combine the ready-prepared chia 'eggs', milk of choice and melted coconut oil.
6Add the wet ingredients to the dry mix and combine well. The cookie mixture should be crumbly but will hold together when rolled into a ball. If the dough is too crumbly, add another tablespoon of milk of choice.
7Take a heaped tablespoon of the mix, roll into a ball, then flatten and shape the edges.
8Place on your lined baking tray. Repeat process for the remaining mix.
9Place cookies in preheated oven and bake for 20 minutes or until golden brown.
10Remove from oven and transfer to a cooling rack.
