

Banana Peanut Butter Doughnuts

Peanut Butter & Banana is a WINNING flavour combo! š OurĀ Banana Peanut Butter Doughnuts are a super yummy LowER carb treat for when you feel like something indulgent and have a few extra carbs to spare.

Ingredients
½ a Packet (170g) of Plant-Based Protein Banana Bread
2TB (40ml) melted butter or coconut oil
1 extra large or 2 small bananas (180g)
Important Tip
Like other banana bread recipes, youāll get the best tasting loaf by using overripe bananas ā brown and spotty are ideal!
Peanut Butter Frosting Ingredients
2 heaped TB (¼ cup) of Peanut Butter
1 heaped TB (35g) of Low Carb Icing Mix.
Optional for decoration
Directions
Banana Doughnuts Method
1Preheat oven at 180 degrees and spray a silicone doughnut tray to avoid sticking.
2Combine the banana bread mix, baking powder in a small bowl and in another small bowl combine the mashed banana, melted butter, egg and milk.
3Add the wet mix to the dry mix, and combine well.
4Use a teaspoon and spoon the mixture evenly into the doughnut tray (approx 4 teaspoons per doughnut) and place in the oven for 15 minutes.
5Once baked, allow to cool in the tray for a few minutes then remove from tray, and place the doughnuts on a cooling rack. Doughnuts must be completely cool before icing, otherwise, the icing will melt and soak in.
Peanut Butter Frosting Method
1Add the Peanut butter, the Icing mix into a small bowl with the 3TB of hot water and mix together until smooth. Mix through the yoghurt until combined. If it is too thick, add a touch more yoghurt or water.
2Spoon the peanut butter icing onto the doughnuts so it slowly drizzles down the sides. Decorate as desired with crushed peanuts for the lowest carb option or banana chips if you think the tiny bit extra carbs is worth it because they taste so good!
