Ingredients
1 pack of Low Carb Vanilla Cupcake Mix
1/2 cup (50g) Desiccated Coconut
2 Eggs
90g melted butter
1/2 cup milk of choice
120g frozen raspberries
100g chopped apple (1 small)
optional
100g chopped walnuts for extra crunch!


Directions
1Preheat your oven to 170 deg. Line your tins with muffin wrappers, then give each wrapper a light spray with oil to ensure zero sticking!
2Place all dry ingredients together in a bowl ( vanilla cupcake mix and coconut) – combine and make a well in the centre. In a separate bowl whisk together eggs and milk
3Pour the egg mixture into the dry mix
4Place your chopped apple and raspberries and any other additions in the bowl as well. Gently fold together.
5When just mixed portion into muffin tins evenly. Bake for 20-25 minutes or until golden brown. (check with a skewer)
Storage
1Will keep in the fridge for up to 5 days and frozen for up to 3 months.
Can also be made with 3 "eggs" worth of Vegan Egg Replacer
