Speedy Pancake Pockets
How often have you skipped breakfast because you didn’t have time? We’ve all done it, and regretted it about an hour later while our stomach is rumbling in a work meeting. So here’s a speedy breakfast for you – with pancakes! Who knew you could have pancakes for breakfast on a day when you’re in a rush? Well by using our Protein Pancake Mix and some of your favourite toppings, you can have the perfect breakfast treat that is not only really delicious, but also full or protein and other goodies to keep you going all morning! Just make a batch of these Speedy Pancake Pockets, freeze, and reheat when you need them!
2 tbsp Protein Pancake Mix 2 Egg whites (or 1 whole egg) 2 tbsp Ricotta (low-fat) 1 tsp Vanilla essence -- Filling Options Strawberries Blueberries Raspberries Coconut flakes Banana Any nuts or seeds – pepitas, sunflower seeds, almonds etc. Whatever takes your fancy!
Heat a medium pan on high. Mix all ingredients together in a bowl and set aside for 5 minutes to thicken slightly. Lower the heat of the pan and spray with oil. Pour out two pancakes, making sure you have some mixture left over. Let the pancakes cook until they start to bubble, then place your fillings on the pancakes. Pour the leftover mixture on top, and flip the pancakes. Cook until golden brown, then remove from the heat. -- Pro tip: Use double or triple the ingredients to make a big batch to freeze and heat up during the week! These freeze really well, and heat up perfectly in a toaster. With the fillings inside the pancake, its tasty and flavoursome while still being able to be transported easily!
