I had a hankering for Shephard's Pie recently but not wanting to dive headfirst into a carb coma I decided to whip up my own, keto shephards pie, or cottage pie as it's sometimes called. It was seriously easy and far out it was delicious. Super healthy, super high protein and low carb. Loving it :) Luke

--The Cheesy Mash 1/2 a large cauliflower 50g of butter 1 cup of grated cheese A dash of milk (any milk is fine) --The Beautiful Bolognese 1kg of beef mince (You could use any mince) 1 large spanish onion 2x 400g tins of diced tomatoes 3 medium zucchinis, grated 2 large carrots, grated 1/2 cup sun-dried tomatoes Your favourite herbs --The Toppings (Optional) Sesame seeds Chilli flakes More cheese
--Preperation
Preheat your oven to 200°C
--To make the Bolognese Sauce
You can use your favourite recipe, or mine here below.
In a large fry-pan on medium-hot heat, fry off the onions until golden brown
Add the beef mince (or mince of your choice) and brown it off
Add in the grated zucchini, grated carrot, diced tomatoes and favourite herbs
Reduce the heat down to a simmer and leave to reduce down for 20-30 minutes (you want the mixture to be nice and thick and rich, not watery)
--To make the Cheesy Cauliflower Mash
Put a pot on the stove with about an inch of water, and a steamer on top
Cut the cauliflower into small equally sized florretes (I had about 15 pieces from 1/2 a cauliflower) and place them into the steamer, steam for about 5-10 minutes until soft
Discard the water from the saucepan and then tip the cooked cauliflower into the saucepan
Add the butter, milk and grated cheese to the saucepan and use a kitchen aid to blitz it until creamy and smooth (if you don't have a kitchen aid you can use a blender)
--Put it all together
Pour the bolognese sauce into a large baking dish, filling the dish about 1/2 way up the side
Pour the cheesy cauliflower mash on top and use a spoon to spread it out to the edges
Top with more grated cheese, sesame seeds and chilli flakes (optional)
Put it in the oven for about 15 minutes or until the top is golden brown!
Pour yourself a glass of wine. You've earn't it.
