Low Carb Apple Tea Cake
Did you ever have those friends or relatives who always used to bring around a tea cake when they came to visit? I’ve got such fond memories for friends arriving for afternoon tea with a fresh tea cake – friends and cake, what could be better? Anna has put together this recipe for a Low Carb Apple Tea Cake, adapted to be low carb from the original recipe. Now you can enjoy some cake again, guilt free!
400g Apples, unpeeled (approx. 4 apples) 1 tsp Cinnamon 150g Almond Meal 100g Protein Pancake Mix 250mL Natural Yogurt 50g Butter 3 Whole Eggs
Preheat oven to 180°C, or 160°C fan forced. Line a cake tin with grease proof paper. Cut the apple into slices, then toss in the cinnamon. Mix the almond meal, Protein Pancake Mix, yogurt and butter together in a medium bowl. Mix the eggs in another bowl until light and fluffy, then fold into the protein pancake mixture. Pour some of the mixture into the cake tin, and carefully lay the apple slices over top. Continue to layer mixture and apples until you run out, finishing on a layer of apple slices. Sprinkle with a little bit of cinnamon and back for 50 minutes, or until a skewer inserted into the centre comes out clean. Cool on a wire rack and serve with some cream.
