Chewy Chocolate Banana Protein Cookies

Another use for your overripe bananas! ? Banana and chocolate is a much-loved flavour combination and our Chewy Chocolate Banana Protein Cookies will not disappoint. Only 6g carbs per cookie. A great mid-afternoon 'sweet-craving' crusher!

1/2 packet (175g) of Plant Based Protein Cookie Mix 1 overripe mashed Banana (100g) 1/2 cup cacao nibs or dark chocolate chips 2 chia 'eggs' How to make a Chia 'Egg' or 2 eggs 1/3 cup coconut oil (80g)

Preheat a fan-forced oven to 160°C and line a flat tray with baking paper. Make the Chia 'Eggs' 15 minutes ahead of time. Place all dry ingredients (cookie mix and choc chips) in a large bowl and combine. Mash banana and add to the ready-made Chia 'Eggs' and coconut oil Add the wet ingredients to the dry mix and combine well. Cookie mixture should be crumbly but hold together when rolled into a ball. If the dough is too crumbly add a tablespoon of milk of choice. Take a heaped tablespoonful of the mix, roll into a ball then flatten and shape the edges. Place on your lined baking tray. Repeat process for the remaining mix Place cookies in preheated oven and bake for 25-30 minutes or until golden brown.
