Anna’s Low Carb Minestrone Soup

2 cloves Crushed Garlic 1 Onion 300g Zucchini 300g Celery 800g Tinned, Diced Tomato 800mL Water 1tsp Ground Chilli 100g Bacon, diced 100g Mung Beans/”Good 4 U” Crunchy Combo 150g Bean Sprouts -- Note: We used the bean sprouts and crunchy combo pictured to the right – but of course you can use any sprouts and canned beans that you prefer.

Place onion and garlic in a saucepan and cook until onion has softened. Add the bacon and cook for 5 minutes. Add all other ingredients except the bean sprouts. Simmer over a medium to low heat for approx 30 minutes, or until the vegetables are tender. Remove from heat and add the bean sprouts. They’ll still be nice and crispy as you serve the soup, adding a delicious crunch! Enjoy on a cold Winters night.
