Pen's Chicken and Bacon Pizza Muffins

This Protein packed recipe was shared by one of our Customers. These Bacon and Chicken Pizza Muffins have a whopping 18.9g protein and only 4.4g carbs! We loved the flavour combo, and decided to feature it on our website.

1 packet of Savoury Muffin Mix 150g egg white or 3 eggs 315ml water (1 1/4 cup) 100g diced bacon, cooked and chopped 100g chopped chicken 1/4 finely chopped red onion 1/2 of bbq sauce (can use sugar free version to keep carbs down) 1/2 cup of diced pineapple 1/2 cup of grated cheese (leave some for the top)

Preheat a fan forced oven to 170°C and place 10 cafe-style muffin wrappers in a muffin tray (or use a silicone tray). Empty contents of this pack into a large bowl. In a separate bowl, whisk together water, eggs Add diced bacon, chicken, onion cheese and pineapple to the mix Swirl through 1/2 cup BBQ sauce Portion out in 10 muffin cases and top with the additional cheese Bake at 170 degrees for 40 mins or until the skewer pulls out clean Allow to cool slightly before removing from tin to cool on rack.
